Seafood paella

Not that much left of the veg box, but some mixed seafood salad in the freezer .. ta-dah .. seafood paella.

Onion
Garlic
Olive oil
Saffron
Red pepper
White wine
Paella rice
Stock
Tomatoes
Seafood mix
Frozen peas

1.  Sautee chopped onion and garlic in olive oil, soak saffron strands in a little water.
2.  Add chopped pepper, stir.
3.  Add paella rice, turn around in the oil until every grain is lightly coated, then chuck in a glass of white wine.
4.  Add the saffron and soaking water, and a little stock, simmer until most of the water is absorbed, then add some chopped fresh tomatoes, simmer a little more, adding more stock if necessary.
5.  Chuck in mixed seafood and a handful of frozen peas, cook for 5 more minutes.
6.  Turn off heat and leave to rest for 5 minutes.
7.  Scoff.

Seafood paella

The joy of a freezer!  Didn't know what to do for dinner, and lots of people here, so had a ferret about in the freezer - frozen squid, seafood salad, king prawns, red peppers and peas ... well, that was pretty much decided then - seafood paella.

Olive oil
spring onions
celery
garlic
mixed herbs
turmeric
paprika
short grained rice (1 small handful per person)
white wine
roasted red peppers
water/stock
tinned chopped tomatoes
squid
seafood salad
king prawns
ginger
chili

Allow all frozen things, except peas, to thaw.

You need two frying pans - one enormous for the paella, and one smaller for the prawns.

1.  Put olive oil in both pans, but only put the heat under the big one.
2.  Saute the spring onions and celery in the big pan, for a few minutes.  Then add crushed garlic - add a clove of crushed garlic to the cold oil in the other pan now too, it saves faff later.
3.  Add turmeric and mixed herbs to the softenned veg, turn over a time or two.
4.  Add the rice, and turn over in the oil to make sure that every grain in slightly coated.
5.  Splash in white wine and simmer until it is absorbed.
6.  Add chopped peppers, paprika and some stock or water.  Simmer until absorbed.  Repeat for about 12 minutes.
7.  Add squid rings.
8.  Turn heat under the other pan and grate in small piece of fresh ginger and chuck in a good pinch of chili flakes.
9.  Add the seafood salad to the paella, and the prawns to the garlic mixture.
10.  Add the peas to the paella, and take off the heat.  Allow the rice to suck up the rest of the juice for a few minutes.

Serve, scoff ... gathered people will be impressed.

I'm sorry, I don't add amounts, as I measure by eye - just use common sense, and what is available!

Squid paella

Oh, what a week it's been!

recipe... ish

olive oil
chopped onion
chopped celery
chopped red pepper
garlic - crushed
paella mix - or paprika and saffron and a few herbs
risotto/paella rice
tinned tomatoes
white wine
squid - sliced into rings
snow peas, chopped into pieces
black olives
salt and black pepper
lemon to serve

OK - sautee chopped onion in oilve oil, and when a bit soft chuck in veg and garlic, stir around a bit - them chuck in rice and spices (or spice mix)- stir around.  When all rice grains are coated chuck in tomatoes, wine and squid, and some water.  Keep simmering for about 15 mins as it all cooks together.  Add in chopped snow peas (or, frankly, frozen peas) and black olives - add more water if it's looking dry.  Keep simmering for another 10ish  minutes - tuen off the heat and let it gently suck up the juices... serve, scoff!

veggie paella and salad

 The second asparagus of the season - the first was steamed and eaten with quails eggs.  Tonight we were after a bit of oomph, but also to appreciate the lovely flavour of asparagus, so I came up with this....

1 onion
Olive oil
Chopped celery
red pepper, chopped
Mushrooms
Risotto/Paella rice (arborio today)
White wine
Garlic
Mixed herbs
Tin of tomatoes
Stock
paprika
asparagus


1.  Soften chopped onion and celery in olive oil.
2.  Add chopped pepper and mushrooms, stir in and allow a minute for them to relax into the mixture.
3.  Add the rice and turn the mixture over so that every grain has a film of oil.
4.  Chuck in wine, crushed garlic, herbs, tinned tomatoes and a tin full of stock....
5.  Stir until mixed - then walk away, leave it to simmer over a low heat .. have a glass of wine and a chat..
6.  Check on it occasionally, you may need to add some more water/stock ... stir to stop it catching on the bottom.
7.  When rice is still al dente - but getting there - stir in chopped asparagus stems - NOT the tips.
8.  repeat stage 6... for about 5 minutes
9.  Add asparagus tips, and a pinch of paprika (taste and season too), check that it is not too dry (should still be gloopy sauce around) - simmer for a few minutes.
10.  turn off heat and leave to relax for at least 5 minutes ... if you can ... then

SCOFF

we had salad leaves and homemade mayonnaise.

Homemade mayonnaise

Egg
Oil (I used olive oil and almond oil)
1 tsp cider vinegar
1 tsp grainy mustard
salt and pepper

Put all ingredients in a pot slightly wider than your stick blender blade.  Put blade in the bottom of the pot, before you turn it on - turn it on and lift slowly up the mixture and out of the container - it's magic, it works.

Tuna and chickpea paella


Stay for lunch they said.  Lovely, I said, don't mind if I do! so, who made the lunch?  Shrug!

That's not fair.  The victims in this case were my lovely parents who allowed me to come and park my bags with them in the evening, and go out for the night with old mates from school... to return after midnight, grunt and go to bed, so to rustle up a bit of lunch with their ingredients was a pleasure.  Thanks M&D.. heretoforth known as "victims".  There was a third victim, she is also related xx sis.

This recipe was adapted from another one... and I tweaked a lot, but significantly increased the tomato, rice and chickpeas and decreased the tuna.  If I made it again (which I would) I would reduce the tomatoes I used, but would keep to my proportions of other stuff.. and as usual measurements are vague, so just adjust to what you have.

Olive oil (about 3 tbsp)
Tuna (300g) - in big "bite size" pieces.
2 peppers, 1 red, 1 yellow, cut into 1.5cm x .5 cm slices (ish)
celery, chopped, about 3 stalks
spring onions - 1 bunch chopped (reserve about 1/4 for garnish)
2 cloves garlic, crushed
1 red chili (the nice 4 inch long shiny, a bit sweet one ... not the firey bird eye type) finely chopped - again reserve a bit for the garnish if you fancy.
1 carton passata (use less for a more authentic, less gloopy dish)
1 pint(ish) fish stock
250g paella rice
1 tin chickpeas, drained
good pinch paprika
pinch saffron

1.  Heat paella pan (or whatever you are using) to quite hot.  Toss tuna pieces, gently, in olive oil.  Sear in hot pan.  Don't faff with them, let them brown, and if possible crisp, on each surface without overcooking.  It should talk no more  than 5-6 minutes - but let them rest enough to nearly caramelise on each surface.  You are aiming for a bit more than "seared" but not much more.
2.  When all tuna surfaces are browned, remove to a plate and cover loosely with foil or baking paper (you want to keep a VERY gentle cooking continuing, but you don't want to steam off any caramelisation).
3.  Add a little oil to the paella pan, add chopped celery, peppers and onion (and any other veg you wish to chuck in.  Stir a bit, on a moderate heat, until a little softenned.
4.  Add crushed garlic and finely chopped chili (or crumbled dried chili, which might be more authentic), keep stirring.  It should look glossy still.  If it doesn't, add a little more olive oil and stir in.
5.  Add rice.  Stir GENTLY, until every grain is covered in a film of oil, and the rice has started to cook a little.  The change is subtle, but it changes form white, to more or less translucent.  The veg mixture will mask this a bit, until you are familair with it - but basically keep stirring gently for a few minutes - don't let it catch on the bottom of the pan.
6. Add passata, stir again, gently.  It'll look sticky quite quickly.  When it starts bubbling again add the stock.  Now stir it confidently, bringing the rice from the bottom of the pan "de-glazing" as you go. (stirring the stubborn bits from the bottom of the pan into the mixture).
7.  Cooking time should now be about 12-15 minutes.  The mixture needs to simmer for a bit, on a low heat, with its lid on. [insert grumble,  Mum - that paella pan is too big for just 4 of us...me, no it's not, there's just a shallower mixture... etc etc... reality - I cook TOO MUCH - I used the lovely (and big enough) risotto pan, and still cooked too much, and in the wrong pan... yes well, I'm cooking it, and I'm trying to balance the flavours, and there are 4 of us not 2, and if we use less tuna, we can use more chickpeas....... etc  xx all)

8.  Add tuna bits... simmer 3 more minutes.
9. Leave to stand for 3(ish) minutes - scoff

with a green salad.

I enjoyed it - and gathered victims were unanimous (it's not family tradition to be vociferous) in praise.  So for my own judgement,  the tuna could have been cooked less -and more of a statement if it was in 1 piece.  but in summary --- BIG WIN!

NB.  From #5 you can leave to cool, and then pick up later ;) ... just make sure you have enough stock, so it doesn't all fry out

Chicken and chorizo paella

Tired and emotional today. Without any liquid assistance I stress, just life, stresses and pressures. So, when I got home at 7 ish -I wanted something which wouldn't take too long, BUT was comforting, nutritious and had enough flavour to beat .. Steam it and eat it... So, remembering I had chorizo, and a chicken breast... Da dah! Chicken and. Chorizo paella. I have had a substantial bowlful, and I fully expect to pack at least 3 portions into pots for lunches...

Olive oil
I onion, chopped
2 inches chorizo, skinned & chopped
Celery .. 1 inch of bunch chopped, or 2 stalks, chopped
Red pepper chopped
2cloves garlic, crushed
1 chicken breast, in bite sized pieces
Rice -I used arborio.. But, whatever suits you
Stock, chicken in my case
Green beans
Mushrooms
Tin chopped tomatoes
Black olives
More water
Seasoning & chili flakes, to suit


Chuck onion and chorizo into big frying pan/Arellano pan/ shallow sauce pan.. And sautéed, add celery, stir. When chorizo starts releasing oil, keep heat up and start adding other ingredients. Stir so nothing burns. When nice and hot, chuck in chicken bits, and stir so they start coking on the outside, a tiny bit of colour is what you are looking for. Then chuck in rice, and stir until every grain has a tiny covering of yummy coloured oil. Chuck in stock, and other veg. Chuck in a little bit more than you think, stir.. Make sure nothing s sticking and keep the heat up. After a few mins stir again, add tin of chopped tomatoes, good sprinkle of chili flakes, and sliced black olives (if you like them). Stir, simmer. Don't fuss with it... Let it simmer over a low ish heat.. OK, stir gently, using spatula or similar to ease bits off the bottom of the pan which are in danger of sticking, otherwise try to leave it alone. When rice is done.. About 20 mins.. Taste it... And it's still a bit saucy turn heat off, and let it suck up juices for 5 minutes. Scoff. Obviously fresh parsley and zest of lemon would be a wonderful livened at the end.. But, come on.. It's a school night!

National sausage week: day 4: butter bean ricey stuff - with a sausage and parmesan garnish

OK - so, not everyone wanted sausages again.  The solution was to make a nice vegetable ricey stuff (could call it paella if it had been more spanish) and cook sausages separately, then serve it all (with or without sausages) with a goodly sprinkling of grated parmesan.  Ricey stuff - onion, red pepper, romanesco sauteed in olive oil for a few minutes, then added rice and garilc, and some spicey seasonning (greekish, in this case) - then stock, a bit at a time as rice is cooking.  After about 15 minutes add frozen peas and buttter beans - adding stock to keep moist throughout.  When rice is nearly cooked (about 20 mins - but tase it) ... and sauce is nearly absorbed, pull off the heat and leave to rest for 5 minutes.  Serve - with, or without, grilled sausages, black pepper and grated parmesan.
