Spanish omelette and salad

Spanish omelette made with Clarissa and Sophie's eggs - delicious.  Boil potatoes, saute onion, pepper, mushroom, bacon (and whatever else is to hand) add boiled potatoes and frozen peas, season.  Whisk eggs, add to mixture fry gently for a couple of minutes, then 20 minutes in the oven, with or without grated cheese on top.  Tomato ketchup is essential.  Victim complained about green things - but will have the 5 a day provided, even if not always consumed.  Clarissa and Sophie have been joined by another 3 bantams - Nigella, Rosemary and Jennifer too - so hopefully there will be lots of eggs coming soon.  They are about 19 weeks old, so should start laying sometime this month.  The jury is out, however, as to whether Jennifer too is infact a hen, and not a cockeral!  Leftovers heated up for breakfast - yum - proper weekend treat.
